The most distinguished of all mead ' Sandomierski ' has a well – balanced herb and spicy aroma. It is produced according to recipes that date back to the heyday of Polish mead production in XVII century, the centre of which was in Sandomierz and the nearby lands. The reference of Sandomierski mead can be found in Gall Anonim's Chronicles. The mead got its unique taste and aroma thanks to the long – term aging in oak barrels and constant temperatures in the cellars.
